Carol has nearly four decades of experience in higher education housing and dining operations. Early accomplishments include increasing meal plan participation through the development and execution of an effective marketing plan, navigating the request-for-proposal process, and implementing a nutritional information system. Most recently, she was integral to the implementation of several sustainability initiatives on campus, including composting, a student-run garden, and trayless dining; opening two new retail operations on campus; and the introduction of biometrics and all-access meal plans in dining.
Carol’s emphasis on teamwork and communication have been driving factors in her success as a foodservice director, and they have translated well into her work as a foodservice consultant and planner. The clients with whom she works benefit from her array of skills and her vast industry knowledge.
